Baja Modern Mexican is set to welcome Chicago-based chef, Jonathan Zaragoza, better known on Instagram as @goatboyintl, and from Season 3 of Netflix’s ‘Taco Chronicles’, as he takes over for one night only on March 26, presented by Tequila Tromba.

From the team behind Tequila Tromba came the idea to combine Zaragoza’s acclaimed cooking, rooted in family traditions, with Baja’s breezy and zesty palate. Partnered with Tequila Tromba’s love for high-quality spirits, this night will be the perfect storm of creative flavours.

Baja’s Head Chef Julius Villamor will collaborate with Zaragoza to deliver a five-course shared menu, featuring modern Mexican fare with an American twist. Guests can enjoy Zaragoza’s unique and authentic vision through Baja’s casual yet thoughtful dining experience.

Zaragoza will hit the ground running after a successful pop-up in Soho House, Chicago and a sold-out event hosted by the Melbourne Food & Wine Festival, ready to inject his buzzing flair for Mexican cuisine into Brisbane’s foodie scene.

The five-course dinner is $95 per person and includes a Tequila Tromba cocktail or mocktail on arrival. Bookings are limited and available via Baja’s website at www.bajamodernmexican.com

About Tequila Tromba:

Signalling the beginning of the Mexican summer, Tromba is the life-giving rainstorm that brings change to Los Altos, the famed tequila producing region of Jalisco. It was this force of change that inspired Marco Cedano, Tequila Tromba founder and Master Distiller, when, despite the naysayers, he embarked on a journey to bring true craft tequila to the world.

A true pioneer of tequila craftsmanship, Marco entered the world of tequila in 1974 with Don Julio Gonzalez. This started a journey which would see him create their first batch of 100% agave tequila, revolutionising the category and creating the new standard of premium tequila.

Following the sale of the distillery, unwilling to accept the corporate changes to his recipe and yearning for more than a traditional role, this master craftsman followed his passion to create Tequila Tromba. Joined by his son Rodrigo, he employs his unwavering standards, precision and decades of experience to guide him and continue his journey to challenge people to drink true craft tequila.
