Solotel CEO, Elliot Solomon set out to capture the essence of Tokyo’s bustling streets in the heart of Brisbane. “I wanted this to be a fully immersive experience – from the glow of neon lights to the aroma of yakitori sizzling over an open flame, and the thrill of stumbling upon an unexpected experience that brings the night to life,” he said. “At its heart, the concept draws inspiration from a Japanese izakaya, while incorporating the very best elements of Japan into one venue.”

Leading the kitchen is Chef Sean Barogo, who brings over 22 years of experience from Japanese kitchens around the world. Having honed his craft as a sushi chef in renowned restaurants across the Philippines, Dubai, and Sydney, along with extensive years as a head chef, he brings a wealth of culinary experience to the Goros kitchen. Sean has worked closely with Solotel Group Executive Chef, Hamish Ingham to develop a menu for Goros Brisbane that is a celebration of bold Japanese flavours, thoughtfully reimagined with a local twist.

Guests can look forward to indulging in playful bites like prawn crackers that elevate the familiar snack to new heights, TikTok-famous 10-yen toasties that have taken social media by storm, and the outlandish UFO burgers. For those craving something uniquely Australian, the crunchy saltbush tempura with chilli miso mayo offers an irresistible fusion of tastes. Traditionalists will love the handmade sushi and gyoza, meticulously crafted and cooked on the iron, while those seeking comfort food will find it in the finger-licking JFC (Japanese Fried Chicken), perfect for sharing with friends in huge bucket serves or savouring solo.

The drinks menu has been carefully crafted to complement the vibrant food offerings. Japanese beers and premium spirits, including the iconic Suntory 196s, set the foundation for a standout beverage lineup. Highlights include a creamy matcha piña colada, topped with boba pearls for a playful twist, and the refreshing sake spritz, an elegant introduction to the world of sake. But the true star of the drinks menu is the legendary sake bomb – a thrilling combination of beer and sake that’s all about fun and interaction.
