Jerome Dalton expands his hospitality empire
August 2015: Renowned chef, Jerome Dalton, is adding a new title – Hotelier – to his already accomplished resume following his investment in Pedder Wilderness Lodge, two hours from Hobart on Lake Pedder in far south-western Tasmania.
Dalton and his business partners have been relentlessly working on the lodge’s refurbishment, which is due to be completed for a grand re-opening in November 2015.
The mastermind behind the hugely successful Dalton Hospitality, Eat Street’s BBQ and Bourbon Bar and Pop Productions dining events, Dalton is thrilled to be re-exploring his Tasmanian roots and sharing his passion for top quality locally grown food further south.
“I’m excited to work with the local Tassie suppliers to serve up a menu full of fresh, organic, fine quality dishes to guests and visitors to this pristine part of the world,” Dalton said.
“Having this unique accommodation and dining opportunity has been a lifelong dream of mine, and to see it come to life after months of hard work is just remarkable.”
“The people, the produce and the natural scenery stand on a whole other level in Tasmania and it’s something that everyone should experience at least once,” he said.
Dalton’s passion for organic, cruelty-free, locally grown and sourced produce is matched by his social conscience. Dalton Hospitality has a long history of offering apprenticeships to disadvantaged youth, and is the principal sponsor of Signal Flare’s Homeless Barbecues in inner-city Musgrave Park; which regularly provide a wholesome meal and essential personal items to Brisbane’s homeless population.
Dalton’s vision for the lodge’s restaurant menu is to work exclusively with Tasmanian food suppliers, growers, wineries and artisan spirit producers, providing a hyper-local dining experience.
Guests can expect to see local Tasmanian seafood including oysters to feature prominently on the menu, and a wine list including Kreglinger and Pipers Brook.
Lake Pedder sits in the World Heritage listed wilderness of south west Tasmania where civilisation is replaced with rugged mountain ranges, forested islands, glassy waters and snowy peaks.
Beyond the stunning backdrops of the Gordon River and Lake Pedder, The Pedder Wilderness Lodge features 80 hotel rooms, a restaurant, refurbished bar, 25m heated lap pool, gymnasium, function and training facilities and Australia’s highest abseil for adventure seekers.
